Taleggio PDO is a soft cheese belonging to the washed-rind family, made with pasteurised cow's milk. Its thin, soft rind takes on a characteristic pinkish colour thanks to the weekly brushings with water and salt. A cheese of ancient origins, ideal for sharing boards, pasta dishes and fondue in Ho.Re.Ca. kitchens.

  • Format: square shape of approximately 2,2 kg, variable and indicative weight
  • Main ingredients: pasteurised cow's milk, salt, rennet
  • Characteristics: soft and melty paste just under the rind, more consistent and crumbly in the centre; sweet and intense flavour in the aged product
  • Ageing: 35 days minimum
  • Storage: 1 - 6 °C; shelf life 60 days
  • Allergens: milk
  • Origin: PDO area across the provinces of Bergamo, Brescia, Como, Cremona, Lecco, Lodi, Milano, Novara, Pavia and Treviso

Pairs well with rustic bread, honey and structured white wines or young reds. Perfect on a mixed cheese board, excellent melted over polenta or risotto and a star ingredient in traditional Lombard pasta dishes. Its melting paste also makes it ideal for gratins and warm fillings in restaurant cooking.
