Smoked cooked pork pancetta, produced by Salumificio F.lli Coati in Negrar di Valpolicella (Verona). Supplied as a half cut, it is a versatile cooked charcuterie product, gluten free and dairy free, ideal in the Ho.Re.Ca. kitchen for searing, fillings and flavour bases.
