Szechuan pepper (Zanthoxylum piperitum), a spice of the Rutaceae family originating from China. It comes as small woody, three-lobed fruits of amaranth colour, with a lemon-like aroma and a warm, woody note. Traditionally used to season many dishes, especially fish and meat.

  • Format: 12 pieces of 100 g
  • Sold as: Sold by the piece
  • Ingredient: Zanthoxylum piperitum (origin China)
  • Characteristics: less pungent than black pepper, with a light lemon aroma; some of its compounds leave a slight numbing sensation in the mouth
  • Storage: keep closed away from humidity and light, far from heat sources (optimal temperature 15°C, RH no higher than 50%); shelf-life 36 months
  • Allergens: contains no declared allergens; the facility also processes celery, mustard, sesame, milk and dairy, soy and gluten, with measures in place to avoid cross-contamination
  • Origin: China

Ideal for seasoning fish and meat dishes, it is a classic of Sichuan Chinese cuisine. Suggested freshly ground at the end of cooking over braised meats, duck, prawns or wok-fried vegetables, or in spice blends to enhance its distinctive citrus note. Perfect for Asian kitchens and for fine-dining menus looking to add a fragrant, spiced accent.
