Szechuan pepper (Zanthoxylum piperitum), a spice of the Rutaceae family originating from China. It comes as small woody, three-lobed fruits of amaranth colour, with a lemon-like aroma and a warm, woody note. Traditionally used to season many dishes, especially fish and meat.
