Frozen white chocolate cream, pasteurised and made with 25% white chocolate for its typical flavour and colour. Produced for professional use, it is used like a standard pastry cream in patisserie and catering.
- Format: 0.500 kg T-sac pouches in cartons; each box contains 8 pouches for a total weight of 4 kg.
- Sold as: sold by the piece.
- Main ingredients: rehydrated skimmed milk, fresh whole milk, white chocolate 25% (sugar, cocoa butter, whole milk powder, skimmed milk powder, vanilla extract), concentrated cream, sugar, modified starch (from maize), salt, natural vanilla extract.
- Storage: keep at no higher than -18°C; shelf life 12 months. Once thawed in the sealed pack, 7 days between 0°C and 4°C.
- Preparation: thaw before use; the T-sac defrosts at fridge temperature (+4°C) within 6 hours.
- Allergens: contains milk; may contain traces of eggs and nuts.
- Origin: Guerra S.p.A., Pomezia (Rome).
Ideal for filling choux buns, éclairs, tarts and modern cakes, or for assembling verrines and spoon desserts. Suggested as a base for semifreddo and mousse, it also works well alongside fresh fruit or mini pastries on hotel and banqueting buffets.
