Pecorino Romano DOP is a hard, semi-cooked sheep's milk cheese made exclusively from whole sheep's milk from Sardinia. The rind is coated with a non-edible black polymer; the paste is white tending to straw-yellow, with a slightly sharp, gently piquant flavour. Suited to Mediterranean cuisine, as a table cheese or grated.
- Format: whole cylindrical wheel, diameter 27-34 cm, heel height 27-31 cm, average weight 23-28 kg (variable weight, approximately ~25 kg)
- Sold as: sold as a whole wheel in a case (case approx 27 kg)
- Main ingredients: sheep's milk, salt, lamb rennet and lactic ferments
- Ageing: ≥ 5 months as a table cheese, in accordance with the Pecorino Romano DOP production specification
- Storage: refrigerate below 10 °C (whole wheels); shelf life 360 days from packaging date
- Allergens: milk and milk-based products, including lactose
- Origin: 100% Sardinian sheep's milk; production area Sardinia
Pairs well with rustic bread, honey and fresh broad beans, or grated over pasta dishes such as amatriciana, cacio e pepe and gricia. Suggested on a cheese and charcuterie sharing platter alongside a structured red wine. Shaved into flakes, it lifts antipasti and main courses of the Mediterranean tradition.
