Smoked flat pancetta by Salumificio Bombieri, dry-salted and left to infuse with aromas, then smoked, hung and seasoned for 2-3 weeks. Vacuum-packed, it is designed for professional Ho.Re.Ca. kitchens that need a smoked cured meat with a regular, even cut.
