Selected borage leaves, trimmed and washed, wrapped in a slowly leavened, hand-worked wheat flour crust, then pre-fried and IQF frozen. The product must be cooked before serving and works well as hot finger food or a warm starter in Ho.Re.Ca. settings.
- Format: polythene food bags of 2 kg in 4 kg cartons, approximately 50/55 pieces per kg, irregular sizes
- Sold as: sold by the piece
- Main ingredients: wheat flour, borage 15%, dehydrated potato flakes, cow's milk, salt, sunflower seed oil, yeast
- Cooking: from frozen; deep fryer in oil 170°C for about 2 minutes, air fryer 170°C for 8 minutes, fan oven 170°C for about 8 minutes, static oven 200°C for about 8 minutes
- Storage: at -18°C, 24 months; do not refreeze once thawed
- Allergens: cereals containing gluten (wheat), milk. Made in a workshop that also uses crustaceans
- Origin: Soc. Agricola Spirito Contadino De Palma, Borgo Tressanti (FG), Italy
Suggested as a warm starter or hot finger food, served crisp and golden straight from frying. It pairs well with light dips, citrus mayonnaise or a squeeze of lemon, and fits into a mixed vegetable fry in the Puglian tradition. Ideal for buffets, aperitifs and platters of warm savoury bites.
