Carboncino dell'Alta Langa is a spectacular, artisanal soft-ripened cheese produced by the Caseificio dell'Alta Langa in the Piedmont region of northern Italy. What makes it truly special is its unique visual signature and its "three-milk" blend, cow, goat and sheep's milk.

Because it's rich but delicate, it pairs wonderfully with crisp sparkling white wines (like a local Alta Langa DOCG or Champagne) which slice through the creaminess. Light, fruity reds like a young Barbera or Pinot Nero also work beautifully. On a cheese board, serve it alongside fresh baguettes, artisanal sourdough crackers, raw honey, or fig compote.
