Parboiled rice of the Ribe variety (Japonica subspecies), produced by Riso Gallo in Robbio, in the province of Pavia. The hydrothermal treatment gives the grains a characteristic blond colour and excellent hold during cooking, ideal for creamy risottos in professional kitchens.
