Aged sheep's milk cheese matured in an earthenware jar with olive sprigs and leaves, made by L'Antica Cascina in Forlì. It has a slightly irregular shape with a pale ochre rind marked by the branches, an ivory paste with fine eyes, a delicate aroma with hints of olive and a sweet, pleasant flavour.
- Format: whole wheel, variable weight, approximately 1.4 kg each; vacuum-packed with a few olive sprigs

- Main ingredients: pasteurised sheep's milk, selected lactic ferments, calf rennet, salt; surface treated with olive leaves

- Storage: refrigerate at +0°C to +4°C; rind not edible, serve at room temperature

- Origin: Italian milk, produced in Forlì (Italy)
Ideal as the centrepiece of a cheese board alongside honey, fruit preserves and nuts. Pairs well with a drizzle of extra virgin olive oil and structured white wines or young reds. Suggested to close a menu or as part of an Italian-style antipasto in the Romagna tradition.
