Wild boar salami, a raw aged cured sausage made in the Tuscan tradition by Bernardini Gastone. Crafted with wild boar meat (60%) and Italian pork (36%), it has an irregular cylindrical shape and a dark brown colour, ideal for charcuterie boards and antipasti in hospitality settings.

  • Format: natural fibre casing, 6 cm x 25 cm, vacuum-packed in heat-shrink plastic film; case of 10 pieces (average 5.400 kg). Variable weight, approximately 0.5 kg per piece.
  • Sold as: sold by the piece, approximately 0.5 kg.
  • Main ingredients: wild boar meat 60%, pork (origin Italy) 36%, salt, sugars (dextrose, sucrose), flavourings, spices. Antioxidant E301; preservative E250.
  • Storage: keep between +2 and +10°C, in a dry place away from light. Best before 180 days from the packaging date.
  • Allergens: no allergenic substances present.
  • Origin: Bernardini Gastone s.r.l., plant IT 1292/L CE.

Pairs well on a mixed charcuterie platter alongside pecorino, Tuscan bread and a glass of full-bodied red wine. Traditionally served as a starter, sliced thinly to bring out its ageing. Also suggested for aperitivi and buffets in character-led dining.
