Hard sheep's cheese made in Sardinia from whole raw ewe's milk, in the tradition of Fiore Sardo DOP. Aged for over 105 days, it is a table and grating cheese with a sharp, piquant and persistent flavour.
- Format: whole wheel with convex "mule's back" shape, diameter 20-25 cm, height 12-15 cm, average weight 3.50-4.00 kg, vacuum-packed
- Sold as: by the whole piece (approx. 3.5 kg)

- Ageing: over 105 days

Pairs well with rustic bread, honey and preserves, and works beautifully on a sharing platter alongside other cheeses and charcuterie. When young it is compact and ideal eaten as it is; at advanced ageing it turns granular and crumbly, perfect for grating to enhance pasta and main courses. A great complementary ingredient in antipasti and traditional Sardinian dishes.
