Cassia cinnamon (Cinnamomum cassia) of the Lauraceae family, a spice with a brown colour and a well-defined, warm and fragrant aroma. The flavour offers woody, pleasant notes that are sweet yet intense. Originating from Indonesia and Vietnam, it is intended for preparing sauces and stews in professional kitchens.
