IQF frozen turnip tops, selected, trimmed and washed, then blanched in boiling water before freezing. A vegetable typical of the Puglia tradition, ready in minutes for side dishes and pasta courses in professional kitchens.
- Format: 2 kg polythene bags in 8 kg cases (4 bags)

- Main ingredients: turnip tops (Brassica Rapa sylvestris var. esculenta)
- Cooking: place frozen in a cold pan with 20 g water, cover and cook over moderate heat for 2 minutes, then uncovered for a further 2 minutes; or boil from frozen for 3/4 minutes. To be eaten cooked, cook from frozen
- Storage: keep at -18°C, 24 months; do not refreeze once thawed

Traditionally served as a side sautéed with garlic, oil and chilli, or as the star of the classic orecchiette con cime di rapa. Also ideal as a base for pasta dishes, fillings and vegetable accompaniments to meat in southern Italian cuisine.
