Steak of Indo-Pacific marlin (Istiompax indica), cold-smoked with natural beechwood smoke, blast-chilled and lightly dried. Produced by Bernardini Gastone, it is designed to be thinly sliced for cold starters and seafood sharing platters in Ho.Re.Ca. service.
- Format: cylindrical steak, 120mm diameter, vacuum-packed. Variable weight, approximately 1.5kg (1.200-1.800 kg per piece)
- Sold as: sold by the piece, average weight approximately 1.5kg
- Main ingredients: Indo-Pacific marlin (Istiompax indica), salt, sugars (dextrose), flavourings, spices. Naturally smoked with beechwood
- Usage: remove from the pack 10 minutes before serving; do not pierce the vacuum pack
- Storage: in a dry place away from light, between 0°C and +4°C. Shelf life 90 days from the packaging date

Pairs well with bread crostini, butter and a squeeze of lemon, or served as a carpaccio with extra virgin olive oil and pepper. Cut into thin slices it is ideal for cold starters, mixed smoked-fish platters and banqueting finger food. Excellent alongside a glass of fresh white wine.
