Swordfish steak (Xiphias gladius), raw, blast-chilled and naturally smoked over beech wood, then briefly dried. Pinkish-white in colour, with a typical flavour and a light smokiness, ideal as a fish starter or carpaccio in Ho.Re.Ca. catering.
