100% Durum Wheat Semolina: Made from high-protein durum wheat ground into a coarse flour (semolina). This gives the pasta its signature golden color, excellent structural integrity, and that perfect al dente bite.
The Shape (Linguine): Linguine translates to "little tongues." It is flatter and wider than spaghetti but narrower than fettuccine. This elliptical cross-section is perfect for catching and holding onto sauces.
Traditional Craftsmanship: Authentic Italian brands like Ligorio often use bronze dies to extrude the pasta. This creates a rough, matte texture on the surface of the noodle, which acts like Velcro for your sauce rather than letting it slip off.
