Type "0" Manitoba soft wheat flour, produced by Antico Mulino Antimo Caputo in Naples. Made from a selection of the finest Manitoba grains, it has a high protein content and excellent yield, giving doughs strong elasticity and extensibility. Suited to preparations that require long leavening times.

- Main ingredients: soft wheat (triticum aestivum), type "0"
- Rheological characteristics: W 340÷380, P/L 0.40÷0.60, absorption 60÷62%
- Storage: in a cool, ventilated place away from direct sunlight, at 15-18 °C; best before 6 months
- Allergens: gluten (naturally present in cereals and flours)

Suggested for making cornetti, panettone and puff pastry, it can be used on its own or blended with the soft wheat flours of the Antimo Caputo range for all doughs that need good leavening. Ideal for long-maturation leavened pastry, where the strength of the flour supports highly hydrated doughs.
