Jamón de Bellota Ibérico bone-in is a Spanish dry-cured ham made from black Iberico pigs fed 100% on acorns (bellota). Offered as a whole bone-in leg, it is a classic centrepiece for the deli counter and sharing platters across Ho.Re.Ca., well suited to hand-carving in front of the guest.
- Sold as: by the piece, whole bone-in ham
- Raw material: black Iberico pig fed 100% on acorns
- Origin: Spain (Ibérico de Bellota denomination)
Pairs well with rustic bread, breadsticks, ripe tomatoes and aged cheeses, as well as a glass of Sherry, Cava or full-bodied red wine; in summer it also works beautifully with melon. Traditionally hand-sliced into very thin, almost translucent slices, it is ideal as a starter, as finger food for buffets, banquets and events, or as the highlight of a mixed charcuterie board. For service, allow the slices to come to room temperature before plating to bring out their aroma and softness; the bone-in leg also makes for a striking display at the table or carving station.
