Frozen fresh egg pasta delizie, bronze-die extruded and in their typical triangular shape, with a 55% filling based on buffalo mozzarella and a Taggiasca olive paste. Conceived as a Mediterranean-character first course for hospitality kitchens.

  • Format: 3 x 1 kg bags in printed PET/PE pouches
  • Sold as: by the case of 3 x 1kg packs
  • Main ingredients: soft wheat flour, buffalo milk mozzarella 15.5%, ricotta, egg 9%, Taggiasca olive paste 2.9% (with single-cultivar Taggiasca extra virgin olive oil), basil pesto with Basilico Genovese DOP, Parmigiano Reggiano DOP and Pecorino Romano DOP
  • Cooking: drop the pasta still frozen into boiling salted water and cook for 3-4 minutes from the return to the boil; drain and dress to taste
  • Storage: at -18 °C for 18 months; in the fridge (0/4 °C) for 24 hours; once thawed do not refreeze
  • Allergens: gluten (wheat), milk, egg, nuts (cashew); may contain crustaceans, fish, soya, almonds, walnuts, pistachios, celery, molluscs

Pairs well with a light butter and sage dressing or a drizzle of extra virgin olive oil, to let the buffalo mozzarella and olive notes come through. Ideal as a first course on an Italian menu, finished with confit cherry tomatoes or a dusting of Parmigiano. Around 7 pieces make up 100 g.
