Gran Cru di Grotta is a sheep's milk cheese aged in a natural cave, produced in Brisighella by L'Antica Cascina. The mature rind is ochre-coloured, the paste cream-coloured with slight irregular eyes; the intense aroma comes from the noble moulds present in the natural environment, with a harmonious and pleasant flavour.
- Format: whole wheel of approximately 2 kg, wrapped in fine cotton muslin.
- Sold as: sold by the piece, variable weight approximately 1.5 kg.
- Main ingredients: pasteurised sheep's milk, selected lactic ferments, calf rennet, salt; surface treated with linseed oil and rice flour on the rind.
- Ageing: minimum 120 days in a natural cave before sale.
- Storage: refrigerate at +0° to +4°C; serve at room temperature, rind not edible.
- Allergens: sheep's milk-based product, contains traces of lactose.
- Origin: Italian milk, produced in Brisighella (Forlì).
Suggested for the cheese trolley and for end-of-meal sharing boards, where it best expresses the character of cave ageing. Pairs well with honey, jams and nuts, accompanied by rustic bread and structured red wines or mature whites. Ideal shaved over pasta dishes or served at room temperature as a starter.
