Crusco Pepper of Senise, a dried pepper typical of Basilicata, crisp and deep red in colour. Traditionally used in Lucanian cuisine, it works either whole or crumbled in professional kitchens.

Traditionally fried for a few seconds in hot oil until crisp, it makes a tasty finger food or a garnish for antipasti.
