Cuttlefish ink (Sepia officinalis) used as a condiment, with a brilliant black colour and a light cuttlefish aroma. Caught in the central-eastern Atlantic with trawl nets, it is designed for risottos, pasta and doughs in Italian seafood cooking.

Ideal for the classic squid ink risotto and for traditional black seafood spaghetti. Pairs well with shellfish, calamari and crustaceans, and works well to colour fresh pasta or gnocchi doughs. Best added at the end of cooking for an intense, even colour.
