Frozen fresh pasta orecchiette, produced by Canuti Tradizione Italiana in Rimini from durum wheat semolina and water, bronze-drawn. Well formed and ivory-white in colour, they are ready to cook straight from frozen for fast service in hospitality kitchens.

- Main ingredients: durum wheat semolina, water
- Cooking: bring salted water to the boil, add the pasta still frozen and cook for 5/6 minutes from when it returns to the boil; drain and dress to taste
- Storage: at -18°C for 18 months; in the fridge (0/4°C) for 24 hours; once thawed do not refreeze
- Allergens: gluten (wheat); may contain eggs and soy

They pair well with rustic sauces such as turnip tops, sausage or fresh tomato and basil, in the classic Puglia tradition. Ideal as a first course in a trattoria or on an Italian restaurant menu, they also work baked and gratinated for banqueting and catering. The bronze-drawn surface holds sauce well.
