Aged sheep's milk cheese with a compact, slightly chalky paste, an ochre matured rind and a pale straw-coloured interior. Its aroma is intense and fragrant and its flavour bold and pleasantly persistent, making it well suited to sharing boards and end-of-meal courses in Italian hospitality.
- Format: whole wheel, variable weight, approximately 2.9 kg each
- Sold as: sold in packs of 2 pieces
- Main ingredients: pasteurised sheep's milk, selected lactic ferments, calf rennet, salt; surface treated with linseed oil, rice flour on the rind
- Ageing: 40 to 90 days depending on the seasonality of the milk
- Storage: refrigerate at +0 to +4 °C; rind not edible
- Allergens: a sheep's milk product, contains traces of lactose
- Origin: Italian milk; produced by L'Antica Cascina, Forlì
Pairs well with honey, mostarda and fruit preserves, or with rustic bread and structured red wines. Ideal on a mixed cheeseboard as a closing course, and equally good shaved over pasta dishes and salads. Serve at room temperature to bring out its aroma and flavour, bearing in mind that the rind is not edible.
