Frozen fresh egg pasta squares, filled to 50% with Indo-Pacific grouper (15.6%) and pistachios. Bronze-drawn pasta with the typical square shape, produced by Canuti Tradizione Italiana in Rimini. Ideal as a fish-based first course in hospitality.

- Main ingredients: soft wheat flour, ricotta, Indo-Pacific grouper 15.6%, eggs 10%, durum wheat semolina, pistachios 3.7%, grated cheese, Grana Padano DOP, Parmigiano Reggiano DOP
- Cooking: bring salted water to the boil, add the pasta still frozen and cook for 6/7 minutes from when it returns to the boil; drain and dress to taste
- Storage: at -18 °C for 18 months; in the fridge (0/4 °C) 24 hours; once defrosted do not refreeze
- Allergens: gluten, milk, eggs, fish, nuts (pistachios). May contain other nuts, crustaceans, soya, celery, molluscs

Pairs well with a light extra virgin olive oil dressing, cherry tomatoes or a pistachio cream echoing the filling. Suggested as a first course on a seafood menu, perfect for restaurant and banqueting service; around 6 pieces per 100 g make portioning straightforward.
