Yellowfin tuna loin (Thunnus albacares) salted and dried, seasoned with salt for a mild, natural profile. The fillets are thawed, trimmed, salted and dried in temperature- and humidity-controlled cells, then vacuum-packed. Ideal in the kitchen for carpaccio and for topping pizzas.
