Gorgonzola DOP, a raw-paste blue cheese with a creamy, soft texture and a slightly straw-white colour marked by the typical blue mould veining. Average maturation of around 50 days, with a sweet, pleasant and slightly piquant flavour. Ideal for the cheese board of Italian hospitality.
- Format: triangular 1/8 wedge of 1.5 kg, rough rosy non-edible rind

Pairs well with rustic bread, honey and walnuts, or with structured red wines and sweet passito wines to close a meal. Works well on a mixed cheese platter, but also melted into risotto, gnocchi and creamy sauces for traditional first courses. Suggested as a dessert cheese or as a topping for gourmet pizzas.
